Tasks and Responsibilities:
Supervise kitchen staff including cooks, assistants and food-preparation workers to ensure high productivity, safe operations and adherence to schedules.
Demonstrate and implement culinary techniques used in Sri Lankan cuisine such as tempering spices, slow-cooked coconut milk curries, seafood curries, hoppers, string-hoppers, kottu roti, sambols, lamprais, and traditional chutneys, and train kitchen staff in preparing these dishes accurately.
Assist in planning menus that feature authentic Sri Lankan specialties, seasonal variations, vegetarian and vegan options, local ingredient adaptations and full catering event menus that meet cost and quality requirements.
Requisition and monitor kitchen supplies including Sri Lankan spices, curry leaves, pandan leaves, coconut products, rice varieties, tropical produce and seafood, ensuring proper inventory control, cost efficiency and consistent quality.
Coordinate kitchen operations during catering events, banquets and regular service to ensure all Sri Lankan dishes are prepared, portioned, garnished and served consistently and on schedule.
Monitor food quality, taste, freshness and presentation of Sri Lankan dishes and ensure that plating and flavour profiles meet the business standards and customer expectations.
Assist in estimating food requirements, labour costs and portion sizes for Sri Lankan menus, and collaborate with kitchen management to meet budget and cost-of-goods targets.
Ensure strict compliance with food safety, sanitation, storage and health regulations, including proper handling of coconut milk dishes, seafood, rice, spice mixes and perishable tropical ingredients.
Train kitchen staff in traditional Sri Lankan cooking methods including spice blending, curry preparation, hopper and string-hopper production, sambol preparation, rice and noodle techniques and authentic presentation styles.
Work closely with service and catering teams to coordinate timing of Sri Lankan cuisine service for events, ensuring smooth execution and high customer satisfaction.
Participate in the selection, maintenance and safe use of kitchen equipment used for Sri Lankan cooking such as hopper pans, steamers for string-hoppers, woks, clay pots and spice grinders.
Support the executive chef in creating new Sri Lankan-inspired menu items, event packages, themed menus and promotional dishes to enhance market differentiation and customer appeal.
Prerequisites:
Education: Secondary school or equivalent.
Experience: 2 years to 3 years preferably in the Hospitality Industry.
Language: English
Hourly Rate: $ 36.00 to $ 38.00 per Hour for 30 to 40 Hours per week
Starting Date: As soon as possible
